David Alexander

Hospitality Chef Trainer & Assessor

David commenced his culinary journey whilst studying the Building trade in Hobart, Tasmania.  A sea change to Perth’s boom in the hospitality culture in the late 90’s, enticed Dave’s return to the sector where he managed and operated several fast-paced kitchens. David decided to expand his culinary skills and knowledge by travelling around Australia, complementing his vast experience with an array of venues across the country.

A return to Perth with his now wife, began a fourteen-year stint as owner and Executive Chef of ‘Dux Café Restaurant’, South Perth. After the sale of Dux, David worked as GM for a hospitality company developing two new venues in Perth CBD. There have also been forays into aged care and large-scale catering.

As a veteran with over three decades of experience, ethics and values, APSI has provided the opportunity for David to share his extensive knowledge and ignite passion in the next generation of culinary professionals.
